To make this possible, we use no additives or thickeners, nor do we sterilize our products at 130°C. Our products don't have to endure weeks of sea travel; we produce them fresh here in Bavaria.
IMPORTANT: Therefore, we ask you to keep the products in the refrigerator after opening. Please also cover the curry pastes with a little neutral oil (e.g., rapeseed or sunflower oil). You're probably familiar with this procedure from

"Prik Gaeng Phet Pak Dai", a curry paste from southern Thailand, forms the basis of many curries and stir-fries.
It is very similar to a "khua-style" red curry paste, which usually contains dried red chilies, lemongrass, galangal, makrut lime peel, coriander roots, garlic, shallots, and shrimp paste.
However, it is a bit hotter because the Cheefa chilies are replaced with hotter Thai Chin Da chilies, both dried and fresh, and a fairly large amount of ground black pepper is added.
The addition of fresh turmeric gives the paste a yellowish-orange hue and also gives it the characteristic "earthy"
You want For a true Thai taste , try Yak Thai. We use shrimp paste, fish sauce, and oyster sauce where traditionally necessary.
We produce all our curry pastes fresh, as is common in Thai markets. This means we don't "dilute" them. The pastes are all very rich, so we recommend increasing the dosage slowly.
