Thai glass noodle salad: Ingredients for 3-4 servings

Glass noodles (Woon Sen) | 200g |
Fresh mushrooms | 100 g |
Shallots - thinly sliced (for garnishing) | 2 tbsp |
Minced meat (pork, beef, as desired) | 100 g |
Shrimp - deveined | 200g |
Red onion - thinly sliced | 100 g |
Celery stalks and leaves - thinly sliced | 1 rod |
Thai chilies - chopped (for garnishing) | 3 -4 |
Red bell pepper - cut into strips (for garnishing) | 1/2 bell pepper |
Roasted peanuts - chopped (for garnishing) | 2 tbsp |
Coriander leaves - chopped (for garnishing) | 2 tbsp |
Spring onion - chopped (for garnishing) | 2 tbsp |
Nam Yam salad dressing (depending on how spicy you like it) | 125 ml - 250 ml |

Thai glass noodle salad: How to make it :
1. Cook the noodles: Bring 4 cups of water to a boil in a saucepan and add the glass noodles. Cook, stirring, for about 5 minutes, until the noodles are tender. Drain and rinse with cold water. Cut the noodles into 6-inch pieces with scissors or a knife and set aside.
2. Prepare the mushrooms: Clean the mushrooms and cut them into thin strips.
3. Deep-fry the shallots and shrimp: Heat the oil in a pan over medium heat and deep-fry the shallots until golden brown and crispy. Remove and drain on kitchen paper. In the same oil, deep-fry the dried shrimp until golden brown; remove and set aside.
4. Sauté the meat and shrimp: Sauté the garlic in the same oil until fragrant. Add the minced pork, shrimp, and mushrooms and sauté until cooked through. Alternatively, the pork, shrimp, and mushrooms can be poached in lightly salted water.
5. Toss the salad: In a large bowl, combine all ingredients except the toppings and add our Nam Yam Sauce for Glass Noodle Salad . Adjust the flavor by adding more or less dressing.
6. Serve: Transfer the salad to a serving platter and sprinkle with the garnishes (red bell pepper, peanuts, cilantro, and spring onions). Serve with fresh vegetables such as cabbage and lettuce leaves.
